Our Story

Baked with intention,
not routine.

Simple Bean started with a quiet conviction: the best bread doesn't need to shout. It needs time, good flour, and a baker who actually cares about the result.

We're a neighborhood bakery and grocer on Highway 3161 in Cut Off. Every morning we fire up the ovens and start with the basics — flour, water, salt, and a sourdough starter that's been fed for years. The rest is patience.

Our pantry shelves carry the same philosophy: simple ingredients, honest sourcing, nothing hidden behind fancy packaging. If we wouldn't keep it in our own kitchen, we don't stock it.

From the Oven

What's rising today

Our ovens run every morning. What comes out depends on the season, the mood, and whatever looks best at the market that day.

Golden buttery croissants on a marble surface

Butter Croissants

Laminated by hand, folded three times, baked until every flake breaks away clean. Made every morning.

Country Sourdough

Our starter, fed daily. Long cold ferment. Crusty exterior, open crumb, tang that lingers.

Assorted pastries including danish and pain au chocolat

Seasonal Pastries

Fruit tarts, danishes, pain au chocolat — rotating with what's fresh and what the kitchen feels like making.

Fresh baguettes cooling on a wire rack

Baguettes & Rolls

Crackling crust, soft and airy inside. Baked in batches throughout the morning so they're never stale.

Our selection changes daily. Stop by or call ahead to reserve something specific.

Simple Bean has become our go-to for Sunday morning bread. The sourdough alone is worth the drive — and the pastries? Unreal.
